I recently purchased the Ursula tartmaster by kitchen supply of Illinois. I made ravioli with it and the antique gadgets tartmaker. The Tartmaster is by far the better device. Solid, well constructed, a strong, non-bending frame, and a sharp, cutting edge on the housing. The teeth of the crimper are appropriately deep to easily make a good seal between two sheets of pasta dough. I got good, clean, well sealed crimp of both sheets with a single low effort depression of the spring loaded crimper. This device allowed me to make full round and half round ravioli with exceptonal ease. I did not have any breakage of ravioli or loss of filling even with a vigorous boil. I expect this device will allow trouble free use for decades.See my review on antique gadgets ravioli/tartmaker for basic use instructions. To make full round ravioli, center the device above the filling with dough around the entire circumference of the device; half rounds can be made by folding dough across the filling, then having the device extend beyond the fold, off of the dough, with only half of the circle covering the dough. This unit will be great for empanadas! I am going to order the 4" size for empanadas and fried pies.
