Excellent pan for super apple pie
J. Mattes

I used this pan to make an apple pie with Alton Brown's Super Apple Pie recipe. With a little extra baking time, it came out great! Being able to remove the outer ring allowed me to cut beautiful, large slices of pie. I used a bread knife to cut my pie which did leave marks on the bottom disk of the pan. I realize the pan is only aluminum so I'm going to try to slide the pie onto a cutting board before slicing next time. However, a few knife marks certainly won't hurt a thing, so not a big deal.I have a smaller Fat Daddio tart pan and it's just as great as this one. This is not a super heavy-duty pan, but with regular use and care, it does a great job. I've read that some people feel these pans are cheap and flimsy. If you don't abuse them and use them as intended they hold up just fine.

It Works For Me
M. Dwyer

I've been wanting to try a tart pan with a removable bottom but am always leery of buying online...sight unseen. I always check the reviews but still wind up going with that "gut feel". Though I had never heard of this brand before, I was very pleased when it arrived. It was sturdy enough for my use and easy to clean. The bottom came out just as expected. I'd certainly buy this brand again without hesitation. The one review I saw that I would probably agree with is that the top lip could be a little thicker so you can flatten the dough for your edge. Otherwise, it worked like a champ. Price and function...that's all I ever ask for. Well done, FD.

Great Pans - - - Great Value * * *

Like some others here, I bought the 10x2-inch pan to make pies that can be removed from the pan the way Alton Brown does with his apple pie. I made a marionberry pie instead of apple, but the goal/result was the same - once the pie cooled, I removed it from the pan and it looked great sitting pretty on a serving plate all by itself and, of course, it was easy to cut and serve.I've had mixed results using dark-colored pans for baking, as they absorb more heat and can sometimes create a tougher and darker crust. Light shiny pans can sometimes create pale and soggy crusts. You can read/learn all about the dark vs. light vs. glass vs. shiny vs. dull baking pans at this helpful website:homemadecookiesandmore(dot com) - from the home page follow the "Using the Right Bakeware" link on the sidebar.Alton used this pan Paderno World Cuisine 9.5-Inch Fluted Non-Stick Deep Tart Mold with Removable Bottom to make his apple pie, but at three times the price, it was a bit too much for my budget, and I'm also not a big fan of non-stick coatings. So I opted for this Fat Daddio pan which, in my opinion, is a real value considering it's professional-grade dull-finished anodized aluminum bakeware - the same stuff Duff (Ace of Cakes) from Charm City Cakes uses.I also made gingerbread in the pan with a cooking-spray-and-flour coating and it released perfectly. And even though the gingerbread batter was very thin/fluid, there was no leaking from the removable bottom whatsoever.I liked the 10x2-inch pan so well, I bought the 8x2-inch size as well - I love them both.
